A gaiwan — a lidded bowl with a saucer — is the most versatile brewing vessel: it handles green tea, oolong and pu-erh alike and rinses clean in seconds. Porcelain, celadon and ceramic gaiwans, mostly 120–170 ml, plus chawan bowls. If you are starting with gongfu, start with a gaiwan.
